VILLANOVA, N.Y. — It's a sign that spring is just around the corner – the Annual Maple Promotion Day in Chautauqua County.
Area maple producers, public officials and members of the farm bureau kicked off the maple season with the ceremonial tree tapping at Dye's Syrup Company in Villanova.
Maple producers say because of the relentless cold, the sap hasn't started fully flowing yet.
"What we don't want to see is these 50s and 60s that go on for a week at a time and like that and of course we don't want those trees to start budding early, because then the season's over," said Linda Fairbanks, Maple Producers Association of the Chautauqua Region.
